Why we're starting with yam, and where we go next

Our storage research starts with yam. Here's why.

Yam is an important crop in Nigeria, and it's often stored for months to sell in the off-season. During that time it can sprout, shrink and rot. If we can help yam keep, the difference to farmers and traders is real.

Yam is also a tough test. If our storage and monitoring work for yam, we'll have learned a lot that applies to other crops.

It's a starting point, not a limit. The same ideas apply to cassava, potatoes and other roots and tubers, and in time to many more crops.

A harvested crop is still alive. It breathes and gives off heat and moisture, so a closed, hot room speeds up spoilage.
